Chai Kuey

Ingredients : 1 small Chinese Turnip (cut into shreds), 1 carrot (cut into shreds), mushroom (cut into cubes), 80g dried shrimp and pounded with 6 small garlics, light soy bean sauce and pepper.

Ingredients to make crystal skin pastry: 1.5 cup wheat flour, 1 tablespoon  salt, 1/4 cup corn starch, 300ml boiling water, 3 tablespoons cooking oil.

Cooking Tips (To prepare chai kuey filling)

1. Heat up the wok with 2 tablespoons oils,  fried the pounded dried shrimps and garlics till golden color and fragrant as well.
2. Add in mushroom to fry.
3. Continue fry together with shred of chinese turnip and carrot  for about 1 minutes.
4. Add in the necessary seasoning such as salt, light soy bean sauce and some pepper, fry another 3 minutes.
5. Take out the fried ingredients.
6.  Leave the fried ingredient cools.

Making crystal skin pastry tips:

1. Mix 1.5 cup wheat flour, 1/4 cup corn starch and 1 tablespoon salt into a large bowl.
2. Pour in boiling water and stir it immediately with a kitchen stick till it form to a dough. Then leave it till cool.
3. Knead dough till smooth and homogeneous texture.
4. Join the cooking oil and knead it to homogenously.
5. Divide dough into small equal portions and shape to dough balls.
6. Cover dough balls with moist towel before start to assembly dumplings.

Assembling dumpling:

1. To avoid the dough ball stick with the surface of the table. You can place a large plastic wrapper on the table and apply lightly oil on the plastic surface.
2. Place on a dough ball, flatter with oily hand palm and press outward evenly from center of the pastry by roller stick.
3.  Rolling out the skin as thin as possible.
4. Lift up carefully the pastry onto your oily hand palm.
5. Put into enough Chai Kuey filling in the middle of the pastry. And then fold it up in half, seal with the dunpling edges by fingers and pleat according to shape.
6. Place the filled Chai Kuey on small piece banana leaf.
7. Repeat the same procedures to make the rest Chai Kuey.
8. And then steam it over high heat for about 8 minutes.
9. Remove from heat and brush on some cooking oil onto the the surface of Chai Kuey.
10. Serve it hot or serve with chili sauce.

Fried Seafood Pastry Dumpling

Fried Seafood Pastry Dumpling

Ingredients : 300g minced mackeral, 10 pieces of wantan skin, 300g mince meat, 75g minced prawn, 1 stalk spring onions.

Seasoning : 1 tbsp salt, sesame oil, 1 tbsp fish oil and a dash of pepper

Cooking Steps :
1. Mix 300g minced mackerel, 100g minced pork and 75g minced prawn together to form a pastry.
2. Marinate the pastry with 1 teaspoon salt, 1 tablespoon sesame oil, 1 teaspoon fish oil and pepper, stir it to homogenously. Chill the mixture in a refrigerator for about 30 minutes.
4. Scoop appropriate mixture, on center of the wantan skin. Wrap the mixture with the wantan skin.
5. Use a little egg white to seal the edges.
6. Deep fry until golden brown, then can serve.

Sour Plum and Papaya

Sour Plum and Papaya

Ingredients :  1 papaya ( not fully ripe ) ( cut into sliced),  salt,  10 sour plums, white vinegar (small bottle),  and sugar.

Cooking Steps :
1. Marinate sliced papaya in a covered container with some salt, 10 sour plums, pour half of bottle of vinegar into it, and add some sugar.
2. Stir a while.
3. Keep it in fridge until next day.
4. Serve cool.
